Halloween Cupcakes

Just for fun, I made these cute cupcakes to help celebrate Halloween. I was planning to make my chocolate cake recipe and share it with you…but then realized I didn’t have a few of the ingredients and now that it is a wee bit harder to run into the store for a really quick stop (baby+car seat)… I decided to improvise with boxed mix with some added love and homemade cream cheese frosting.

I found the Wilton decorations marked down after Halloween last year, so decided to put them to use!

**Tips to make any boxed cake mix better…add an extra egg and half a box of pudding mix! Boom..done taste better already. Homemade frosting is easier than you think. If you aren’t feeling that either just add some cream cheese to canned frosting and you’re good to go.

I made the frosting with 1 package of cream cheese, 1 stick of butter, some vanilla, and powdered sugar. Then filled a zip lock bag, piped on the frosting, added some black edible sparkles, and topped it with the Wilton toppers. Super cute and fun!

I made 24 cupcakes…took half to work.. which Mike was mad at me for because he LOVES my cupcakes (that being said he ate 5 the first night lol). One of the girls I work with thought it would be fun to snap my picture with the cupcake….
