At some point this Summer we will get to the hot days where we do not want to turn on the oven (Haha). This Slow Cooker Roasted Chicken and Summer Vegetables is perfect for those days to feed the family.
With just a few simple ingredients and seasonings, you can have a rotisserie style chicken right at home. This all cooks together so no need for extra steps. And you can use the leftover chicken for lots of other meals!
All you have to do is layer the vegetables in the bottom of your slow cooker. Then rinse and pat dry your young chicken. Season the chicken and lay it breast side up. Cover and cook low 6-8 hours or high 4-5 hours. Then during the last 30 minutes of cooking add the Summer squash.
Boom done- nice easy, healthy meal that comes together in just a few steps! Enjoy 🙂
Slow Cooker Roasted Chicken and Summer Vegetables
- 5 lb young chicken
- 7-8 small gold potatoes
- 1 bundle Rainbow Carrots (about 8 small carrots) cut in half
- 1/2 onion (quartered)
- 1 yellow summer squash (sliced)
- 1/2 tsp sage
- 1 tsp paprika
- salt & pepper to taste
1. Remove neck and giblets from young chicken.
2. Rinse and pat dry with paper towl.
3. Spray slow cooker with cooking spray.
4. Line the bottom of slow cooker with potatoes, carrots, and onions.
5. Place the chicken over the vegetables breast side up.
6. Rub the chicken with seasonings.
7.Cover and cook on high for 4-5 hours adding the summer squash during the last 30 mins of cooking.
*Tips- cook until veggies are soft and internal temp of chicken is at least 165
