Cranberry Tuna Salad Lettuce Boats

Need a quick healthy lunch on these Summer days? I made these Cranberry Tuna Salad Lettuce Boats in just a few minutes! I had some fresh romaine at the house so wanted to make something besides a salad. I felt good after eating these tuna salad boats and the protein from the tuna held me over through the night at work. I had fresh romaine lettuce from the produce stand so decided to use the lettuce instead of bread for a sandwich- and it was perfect!

All you have to do is whip up some tune salad with what you like. I used whipped dressing, celery, and dried cranberries. I would have used some onions but I didn’t have any so used some onion powder instead.

Mix it all up…

And spoon into romaine leaves
