Summer Berry Cupcakes

These Summer Berry Cupcakes are so easy with white box cake mix as the base and then the addition of some fresh berries. To make them even better these cupcakes are topped off with homemade cream cheese frosting! So tasty, flavorful, and pretty!

What you need to make these Summer Berry Cupcakes:

Mike’s favorite thing for me to make are cupcakes so I figured I would create something festive and fun for Summer..hence these Summer Berry Cupcakes!

To make these easy cupcake all you do is combine the cake mix with the vegetable oil, egg whites, and water and beat for about 2 minutes untill well combined. Then fold in the fresh diced strawberries and blueberries.

Fill cupcake liners about 3/4 full with batter. Then bake at 350 for about 16 minutes.

To make the frosting combine room temperature butter, softened cream cheese, and powdered sugar and beat until well combined.

Fill ziplock bag or piping bag and pipe the frosting onto cupcakes.

Then top with addition blueberries or diced strawberries and enjoy !!

Summer Berry Cupcakes

These Summer Berry Cupcakes are perfect all Summer long or for Memorial Day or Fourth of July.

Cook Time 16 minutes
Course Dessert
Servings 24 cupcakes

Ingredients
  

  • 1 box white cake mix
  • 4 egg whites
  • 1 1/4 cups water
  • 1/2 cup vegetable oil
  • 1/2 cup blueberries
  • 1/2 cup diced strawberries

For frosting:

  • 2 cups powdered sugar
  • 4 tbsp butter
  • 4 oz cream cheese

Instructions
 

  • In a large bowl add cake mix, egg whites, water, and vegetable oil.
  • Beat for about 2 minutes until everything is well combined.
  • Fold in strawberries and blueberries.
  • Spoon into a lined cupcake pan about 3/4 full.
  • Bake at 350 for about 16-18 minutes.

For frosting:

  • In a medium bowl combine powdered sugar, cream cheese, and butter.
  • Beat until smooth.
  • Fill a piping bag or Ziplock bag and pipe onto cupcakes.
  • Top with additional blueberries and diced strawberries for garnish.
