Ingredients

  • 1 tbsp olive oil
  • 1 lb. ground pork or beef
  • 1/2 cup shredded carrots about 1 medium
  • 1 clove of garlic minced
  • 1 tsp ground ginger or fresh
  • 1/4 cup brown sugar
  • 1/2 cup low sodium soy sauce
  • dash red pepper flakes optional
  • 3 packages Ramen Noodles (seasoning removed) cooked and drained
  • 2 eggs

Instructions

  • First start by adding some olive oil to your sauté pan or skillet and start cooking the pork, carrots, and garlic.
  • Once browned, add in the ground ginger, brown sugar, red pepper flakes, and soy sauce. Give it all a stir and let simmer for a few minutes.
  • Next add in your cooked ramen noodles, give everything a stir. The noodles will absorb the majority of the liquid. Then simply push the mixture to the side and add in the eggs.
  • Let them cook a bit, break them up, and once mostly cooked stir them around into the noodles.
  • Serve with favorite toppings such as sriracha sauce, green onions, more red pepper flakes or sesame seeds.
