Air Fryer Turkey Stuffed Peppers

These Air Fryer Turkey Stuffed Peppers are loaded with fresh ingredients, seasonings, and brown rice. Cooked to perfection quickly with the help of the Air Fryer!

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 2 roma tomatoes chopped
  • 1 jalapeno diced
  • 1 small onion diced
  • 1/2 tsp spanish smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp red pepper flakes
  • Salt & Pepper to taste
  • 1/2 cup brown rice instant
  • 1 cup shredded cheese divided
  • 3 large bell peppers or 4 medium, top cut off and seeds removed.

Instructions
 

  • In a saute pan over heat olive oil over medium heat and add the ground turkey, tomatoes, jalapeno, and onion.
  • Cook until turkey is browned and vegetables are soft and fragrant.
  • Drain any grease and return to heat.
  • Stir in spices, rice, and water and cover and cook for about 6 minutes.
  • Stir in 1/2 cup cheese and spoon mixture into hollowed out bell peppers and place pepper tops back on the pepper.
  • Place peppers inside an air fryer and spray with nonstick spray or brush with olive oil.
  • Cook at 360 for about 8 minutes.
  • Then rotate peppers and cook for another 8 minutes.
  • Remove pepper tops and add remaining cheese on top of peppers and cook for another 3 minutes until cheese is melted.

Notes

Serve with salsa, sour, and toppings of choice!
**note- cooking times may vary according to the appliance.
**can bake too follow instructions and place in baking dish in oven and bake until peppers are soft.
