Soft & Chewy Pumpkin Cookies

flour

baking soda
1/2
tsp
baking powder
1
tsp
cinnamon
1
cup
butter
(2 sticks) room temp
1
cup
sugar
1
egg
1
tsp
vanilla
1
cup
pumpkin
(about 1/2 a can)
32
pumpkin candies
optional
Instructions
In a medium bowl combine the flour, baking soda, baking powder, and cinnamon. Whisk until well combined.
Then in a large mixing bowl using a mixer, beat butter and sugar until soft and fluffy.
Then add the pumpkin, egg, and vanilla to the butter mixture.
Beat a little longer then add the dry ingredients.
Beat until dough forms and well combined.
Wet hands and rolls dough into 2 inch balls and place on cookie sheet.
Bake at 375 for about 10-12 minutes.
Once removed from oven push pumpkin candies into center of cookie.
Sprinkle with additional sugar if desired.
Notes
**dough is a little sticky, so wet hands to form dough balls.
