Raspberry Pecan Dessert Bars

These easy to make raspberry bars are the perfect sweet treat with fresh raspberries all Summer long!

Ingredients
  

  • 3 cups Corn Cereal Chex or Similar
  • 1/8 cup sugar
  • 1/4 cup butter melted
  • 3/4 cup sweetened condensed milk divided
  • 1 1/2 cups fresh raspberries or about 6 oz preserves
  • 1/2 cup flaked coconut
  • 1/2 cup pecans or walnuts

Instructions
 

  • Preheat oven to 350 degrees.
  • Use a food processor or blender to grind up the cereal into crumbs.
  • Mix cereal crumbs, sugar, and melted butter in a small bowl.
  • Press into the bottom of a sprayed 8x12 or 8x8 baking dish.
  • Drizzle 1/2 of the sweetened condensed milk over the crust mixture.
  • Refrigerate the crust for about 10 minutes.
  • Next add the raspberries on top of crust.
  • Then sprinkle with the pecans and coconut flakes.
  • Drizzle the rest of the sweetened condensed milk over the layers.
  • Bake for about 25 minutes or until the edges start to brown a bit.
  • Once cooled, cut into bars and enjoy.

Notes

**Notes: Can use preserves over fresh raspberries. 
Store bars in refrigerator. Since using fresh raspberries, consume within a few days. 
Can double recipe and make in a 9x13 dish.
