Easy Cinnamon Toast Crunch Poke Cake

This easy poke cake has layers of cinnamon cake, vanilla pudding, cream cheese frosting, and Cinnamon Toast Crunch Cereal!

Ingredients
  

  • 1 box Cinnamon Toast Crunch Cake Mix
  • 1 Cup water
  • ½ Cup vegetable oil
  • 2 Cups Cold Milk
  • 1 3.4 oz box of Vanilla Pudding Mix (instant)
  • 1 16 oz. tub of Cream Cheese flavored frosting or vanilla
  • 1 tsp vanilla optional
  • ½ cup Cinnamon Toast Crunch Cereal
  • cinnamon for garnish

Instructions
 

  • Combine the cinnamon toast crunch cake mix with the ingredients it calls for ( I always add an extra egg but you don't have to). Mix it up until the batter is well combined.
  • Pour into a 9x13 baking dish. Bake according to the box, mine took about 25 minutes at 350 degrees.
  • While the cake is baking- make your pudding by whisking the milk and vanilla pudding mix. Once thickened refrigerate until you are ready to use it.
  • Once the cake is done, let it cool completely and then use the end of a wooden spoon or a silicone spatula to poke holes into the cake. Then spread the cold pudding over the cake.
  • Remove the lid and foil of the can of frosting and microwave for about 20-25 seconds just until you can stir it.
  • I added a little vanilla right to it to make it taste more homemade, too. Then pour over the pudding layer.
  • Top it off with some cereal pieces and sprinkle with cinnamon.
