Easy Cinnamon Toast Crunch Poke Cake

When I was strolling through the baking aisle and noticed the Betty Crocker Cinnamon Toast Crunch Cake Mix, I knew I had to swoop one up and create something with it. I actually had some of the cereal at the house so was prepared to whip up one of my favorite easy cakes- poke cakes! This Easy Cinnamon Toast Crunch Poke Cake has layers of cinnamon cake, vanilla pudding, vanilla frosting, and crunchy cereal on top. It is rich- but oh so worth every calorie.

What you need for this Cinnamon Toast Crunch Cake

  • Cinnamon Toast Crunch Cake Mix
  • Eggs
  • Vegetable Oil
  • Vanilla pudding
  • Milk
  • Can of Cream Cheese Flavored frosting
  • Vanilla
  • Cinnamon
  • Cinnamon Toast Crunch Cereal
  • A 9×13 baking dish
  • Mixing Bowl

I served this fun cake to some family and they loved it. 9 x 13 cakes are good for when you have company (or you can have dessert for the entire week). Either way this one is easy and a keeper! Great if you want to something for Fall but aren’t too crazy about pumpkin recipes or apple- too!

How to Make this Easy Cinnamon Toast Crunch Poke Cake Recipe with Cinnamon Toast Crunch Cake Mix

First combine the cinnamon toast crunch cake mix with the ingredients it calls for ( I always add an extra egg but you don’t have to). Mix it up (I always just do this by hand, but a electric mixer is the way to go).

Once the batter is well combined pour into a 9×13 baking dish. Bake according to the box, mine took about 25 minutes at 350 degrees.

For the Poke Cake Layer

While the cake is baking- make your pudding by whisking the milk and vanilla pudding mix. Once thickened refrigerate until you are ready to use it.

Once the cake is done, let it cool completely and then use the end of a wooden spoon or a silicone spatula to poke holes into the cake. Then spread the cold pudding over the cake.

For the Cream Cheese Frosting Layer

Okay so you can definitely make your own frosting if you want BUT I am all about easy recipes. So- grab your favorite brand’s can of Cream Cheese Frosting and remove the lid and foil. Microwave for about 20-25 seconds just until you can stir it. I added a little vanilla right to it to make it taste more homemade, too. Then pour over the pudding layer.

Top it off with some cereal pieces and sprinkle with cinnamon.

I kept this cake in the refrigerator until we served it and after. ENJOY!

  • ½ Cup vegetable oil
  • 2 Cups Cold Milk
  • 1 3.4 oz box of Vanilla Pudding Mix (instant)
  • 1 16 oz. tub of Cream Cheese flavored frosting or vanilla
  • 1 tsp vanilla optional
  • ½ cup Cinnamon Toast Crunch Cereal
  • cinnamon for garnish
