Slow Cooker Roasted Chicken and Summer Vegetables

This easy slow cooker meal is a healthy alternative to a rotisserie style chicken!

Ingredients
  

  • 5-6 lb young chicken
  • 7-8 small gold potatoes or similar
  • 1 bundle Rainbow Carrots (about 8 small carrots cut in half)
  • 1/2 onion quartered
  • 1 yellow summer squash sliced
  • 1/2 tsp sage
  • 1 tsp paprika
  • salt & pepper to taste

Instructions
 

  • Remove neck and giblets from young chicken and rinse and pat dry.
  • Spray the slow cooker with some cooking spray.
  • Line the bottom of slow cooker with potatoes, carrots, and onions.
  • Place the chicken over the vegetables breast side up.
  • Rub the chicken with seasonings.
  • Cover and cook on high for 4-5 hours or low 6-8 (adding the summer squash during the last 30 mins of cooking.)

Notes

Tips- cook until veggies are soft and internal temp of chicken is at least 165
