Slow Cooker Roasted Chicken and Summer Vegetables

This easy slow cooker meal is a healthy alternative to a rotisserie style chicken!

Ingredients
  

  • 5-6 lb young chicken
  • 7-8 small gold potatoes or similar
  • 1 bundle Rainbow Carrots (about 8 small carrots cut in half)
  • 1/2 onion quartered
  • 1 yellow summer squash sliced
  • 1/2 tsp sage
  • 1 tsp paprika
  • salt & pepper to taste

Method
 

  1. Remove neck and giblets from young chicken and rinse and pat dry.
  2. Spray the slow cooker with some cooking spray.
  3. Line the bottom of slow cooker with potatoes, carrots, and onions.
  4. Place the chicken over the vegetables breast side up.
  5. Rub the chicken with seasonings.
  6. Cover and cook on high for 4-5 hours or low 6-8 (adding the summer squash during the last 30 mins of cooking.)

Notes

Tips- cook until veggies are soft and internal temp of chicken is at least 165
