Method
- Remove neck and giblets from young chicken and rinse and pat dry.
- Spray the slow cooker with some cooking spray.
- Line the bottom of slow cooker with potatoes, carrots, and onions.
- Place the chicken over the vegetables breast side up.
- Rub the chicken with seasonings.
- Cover and cook on high for 4-5 hours or low 6-8 (adding the summer squash during the last 30 mins of cooking.)
Notes
Tips- cook until veggies are soft and internal temp of chicken is at least 165
