Pork Tenderloin with Apples and Chranberries
This hearty Fall dish comes together with just a few ingredients resulting in tender juicy pork, potatoes, apples, and cranberries.

- 1 8.8 oz. package honey gold potatoes about 20 small potatoes
- 2 apples peeled and diced
- 1/2 cup dried cranberries or cherries
- 1 cup sweet white wine
- 1 shallot sliced
- 1 clove garlic diced
- 1 pork tenderloin
- salt and pepper to taste optional
- 1 tbsp. olive oil
In baking dish add potatoes, apples, cranberries, shallots, and garlic.
Pour wine over potato mixture.
Set pork tenderloin over all the ingredients.
Salt and pepper to taste.
Drizzle with olive oil.
Bake uncovered at 350 for about 50 minutes or until internal temperature is at least 145.
.Spoon the liquids over the pork tenderloin.
Let rest then slice and serve.
