This one pan baked Pork Tenderloin with Apples and Cranberries recipe is the perfect hearty meal for Fall. With just a few ingredients you can have a complete meal on the table in an hour. This meal has very little prep and has a beautiful presentation with the apples and cranberries!
I love this Pork Tenderloin with Apples and Cranberries recipe because it has your meat, potatoes, and fruit all in one! We do not eat pork tenderloin that often but I wanted to do something with the apples we have from our apple tree. With just 8 items and a few seasonings you can have a fancy looking feast!
The prep for this meal is very simple. First, you add the potatoes, the diced apples, cranberries, garlic, and shallots to your baking dish.

Next add the pork tenderloin over the potato mixture. Salt and pepper to taste, then pour the wine over the entire dish.
Pork Tenderloin with Apples and Chranberries
Ingredients
- 1 8.8 oz. package honey gold potatoes about 20 small potatoes
- 2 apples peeled and diced
- 1/2 cup dried cranberries or cherries
- 1 cup sweet white wine
- 1 shallot sliced
- 1 clove garlic diced
- 1 pork tenderloin
- salt and pepper to taste optional
- 1 tbsp. olive oil
Instructions
- In baking dish add potatoes, apples, cranberries, shallots, and garlic.
- Pour wine over potato mixture.
- Set pork tenderloin over all the ingredients.
- Salt and pepper to taste.
- Drizzle with olive oil.
- Bake uncovered at 350 for about 50 minutes or until internal temperature is at least 145.
- .Spoon the liquids over the pork tenderloin.
- Let rest then slice and serve.

Some questions answered:
- What is a Shallot? A shallot is a type of onion. You can find them in the produce section. They look like a small onion.
- Can you use different potatoes? Yes just cut them in half if they are larger in size.
- Can you use different type of onion? Yes I just chose shallots because they have a sweeter taste.
- What temperature is safe to eat pork? There is an old conception that pork has to be well done. That isn’t true. Medium is a great temp for pork tenderloin to result in juicy meat without it being dried out! (at least 145 f degrees)
