Garden Fresh Zucchini Noodles

These Simple Garden Fresh Zucchini Noodles are made with just four ingredients and cook in about five minutes for a quick and healthy lunch idea.

Equipment

  • 1 Spiralizer or Mandalin

Ingredients
  

  • 1 medium zucchini 2 cups shredded
  • 1/2 cup cherry tomatoes
  • 2 tbsp Garlic Expressions Vinaigrette
  • parmesan cheese and or red pepper flakes optional

Instructions
 

  • First start by rinsing your zucchini off and cutting off the top. Grab your spiralizer or method of choice to make two cups of zucchini noodles. I also sliced the cherry tomatoes in half.
  • Grab a small pot or sauté pan and add the zucchini noodles, the Garlic Expressions Vinaigrette, and the cherry tomatoes.
  • Cook over medium to high heat for abut five minutes until the cherry tomatoes have softened and the zucchini noodles are tender to your liking.
  • Add the mixture to your bowl and top with some parmesan cheese and red pepper flakes if desired. Enjoy warm!
