Garden Fresh Zucchini Noodles

These Simple Garden Fresh Zucchini Noodles are made with just four ingredients and cook in about five minutes for a quick and healthy lunch idea.

Ingredients
  

  • 1 medium zucchini 2 cups shredded
  • 1/2 cup cherry tomatoes
  • 2 tbsp Garlic Expressions Vinaigrette
  • parmesan cheese and or red pepper flakes optional

Equipment

  • 1 Spiralizer or Mandalin

Method
 

  1. First start by rinsing your zucchini off and cutting off the top. Grab your spiralizer or method of choice to make two cups of zucchini noodles. I also sliced the cherry tomatoes in half.
  2. Grab a small pot or sauté pan and add the zucchini noodles, the Garlic Expressions Vinaigrette, and the cherry tomatoes.
  3. Cook over medium to high heat for abut five minutes until the cherry tomatoes have softened and the zucchini noodles are tender to your liking.
  4. Add the mixture to your bowl and top with some parmesan cheese and red pepper flakes if desired. Enjoy warm!
