Southwestern Cheesy Potatoes
This is a great spin on the classic cheesy potatoes casserole! Peppers, onion, and tortilla add extra flavor.

- 1 30 oz bag frozen hash browns or Potatoes O Brian and skip the onion/ bell pepper
- 2 cups colby jack cheese divided
- 1 10.5 oz can cream of chicken
- 8 oz sour cream
- Salt and pepper
- 2 jalepenos diced
- 1 red pepper chopped
- 1 small onion chopped
- 1-2 cups crushed tortilla chips
In 9x13 baking dish add the hash browns, cream of chicken, sour cream, peppers and onions and 1 cup of cheese.
Mix well and then top with more cheese and tortilla chips.
Bake at 350 for about 40-50 minutes or until hot throughout and cheese is melted on top.
