Southwestern Cheesy Potatoes

This is a great spin on the classic cheesy potatoes casserole! Peppers, onion, and tortilla add extra flavor.

Ingredients
  

  • 1 30 oz bag frozen hash browns or Potatoes O Brian and skip the onion/ bell pepper
  • 2 cups colby jack cheese divided
  • 1 10.5 oz can cream of chicken
  • 8 oz sour cream
  • Salt and pepper
  • 2 jalepenos diced
  • 1 red pepper chopped
  • 1 small onion chopped
  • 1-2 cups crushed tortilla chips

Method
 

  1. In 9x13 baking dish add the hash browns, cream of chicken, sour cream, peppers and onions and 1 cup of cheese.
  2. Mix well and then top with more cheese and tortilla chips.
  3. Bake at 350 for about 40-50 minutes or until hot throughout and cheese is melted on top.
Grill/Smoker Instructions
  1. Follow all the steps above and place on smoker and let smoke at 225 degrees F for about 2 hours until hot throughout. Can sprinkle with all purpose BBQ Rub, too. (can use aluminum pan or large cast iron as well).
