In Instant Pot add the tomatoes, jalapeno, onion, and garlic.
Then add the sirloin steak.
Then add the sriracha sauce, enchilada, sauce, water and salt and pepper.
Seal and lock the lid and set the Instant Pot to High Pressure cook for 35 minutes.
Once finished cooking manual release the steam.
Take steaks out and shred and return to pot in the liquids.
Serve hot in tortillas or over rice!
Top with toppings of choice: sour cream, hot sauce, avocado, cilantro, cheese, or lime juice.
