Instant Pot Shredded Beef Tacos

Equipment

  • Instant Pot or Pressure Cooker

Ingredients
  

  • 1 small onion chopped
  • 1 jalapeno diced
  • 2 Roma tomatoes chopped
  • 2 cloves garlic minced
  • 1.5 lbs sirloin steak or similar
  • 2-3 tbsp Sriracha sauce
  • 1 10 oz. can red enchilada sauce
  • 1 cup water
  • salt & pepper to taste
  • 1 10 count package tortillas

Instructions
 

  • In Instant Pot add the tomatoes, jalapeno, onion, and garlic.
  • Then add the sirloin steak.
  • Then add the sriracha sauce, enchilada, sauce, water and salt and pepper.
  • Seal and lock the lid and set the Instant Pot to High Pressure cook for 35 minutes.
  • Once finished cooking manual release the steam.
  • Take steaks out and shred and return to pot in the liquids.
  • Serve hot in tortillas or over rice!
  • Top with toppings of choice: sour cream, hot sauce, avocado, cilantro, cheese, or lime juice.
