Instant Pot Shredded Beef Tacos

Ingredients
  

  • 1 small onion chopped
  • 1 jalapeno diced
  • 2 Roma tomatoes chopped
  • 2 cloves garlic minced
  • 1.5 lbs sirloin steak or similar
  • 2-3 tbsp Sriracha sauce
  • 1 10 oz. can red enchilada sauce
  • 1 cup water
  • salt & pepper to taste
  • 1 10 count package tortillas

Equipment

  • Instant Pot or Pressure Cooker

Method
 

  1. In Instant Pot add the tomatoes, jalapeno, onion, and garlic.
  2. Then add the sirloin steak.
  3. Then add the sriracha sauce, enchilada, sauce, water and salt and pepper.
  4. Seal and lock the lid and set the Instant Pot to High Pressure cook for 35 minutes.
  5. Once finished cooking manual release the steam.
  6. Take steaks out and shred and return to pot in the liquids.
  7. Serve hot in tortillas or over rice!
  8. Top with toppings of choice: sour cream, hot sauce, avocado, cilantro, cheese, or lime juice.
