Lemon Blueberry Cream Cheese Cake

Ingredients
  

  • 1 box lemon Cake mix
  • 3 eggs
  • 1 cup water
  • 1/3 cup vegetable oil
  • 1 lemon zested
  • 1 cup blueberries
  • 1 8 oz package of cream cheese softened
  • 1 box lemon pudding Instant
  • 2 cups milk (for pudding)
  • 1 tub whipped topping
  • 1 tbsp vanilla

Instructions
 

  • Make cake mix according to box (mine called for 3 eggs, 1 cup water, and 1/3 cup vegetable oil.
  • Add the lemon zest and mix well.
  • Pour batter into a greased 9x13 pan and add cream cheese dollops and blueberries.
  • Bake at 350 for about 26 minutes.
  • Let cake cool then poke holes using the end of a wooden spoon or similar.
  • Make lemon pudding mix (with milk).
  • Pour lemon pudding over cooled cake.
  • Add 1 tbsp vanilla to the whipped topping and spread over pudding layer.
  • Add more blueberries or lemon zest on top for garnish!
