Maple Pecan Pumpkin Cupcakes
These easy pumpkin cupcakes are topped with a maple cream cheese frosting and pecans!

- 1 box spice cake mix
- 3 eggs
- 1/2 cup vegetable oil
- 1 cup pure pumpkin
- 1/2 cup chopped pecans optional
For Frosting
- 2 cups powdered sugar
- 4 oz cream cheese room temperature
- 4 tbsp butter room temperature
- 2 tbsp maple syrup
- cinnamon
- pecans
In a large bowl combine boxed cake mix, eggs, vegetable oil, and pumpkin.
With an electric mix beat until well combined for about 2 minutes.
Fold in chopped pecans.
Fill lined cupcake pan with batter about 3/4 full per cup.
Bake at 350 for about 18 minutes (or according to box).
For frosting:
In bowl of your electric mixer, combine powdered sugar, cream cheese, butter, and maple syrup.
Beat until well combined and powdered sugar in dissolved.
Fill a piping bag or ziplock bag and pipe onto cupcakes.
Sprinkle with cinnamon and top with more pecans.
