Simple Irish Oatmeal Muffins

- 1 cup oats
- 1 cup milk
- 1 tablespoon white vinegar
- 3/4 cup brown sugar
- 1/4 cup vegetable oil
- 1 1/4 cup flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 egg.
In a medium bowl combine the milk and vinegar to sour the milk.
Then add the oats and soak for a few minutes until soft.
Mix in the egg, brown sugar, and vegetable oil.
Then add in the flour, salt, baking powder, and baking soda and stir until well combined.
Fill the cupcake pan or muffin tins half full.
Bake at 375 degrees for 15-20 minutes.
