Simple Irish Oatmeal Muffins

These Simple oatmeal muffins are easy to make and perfect as a side or quick snack!

Ingredients
  

  • 1 cup oats
  • 1 cup milk
  • 1 tablespoon white vinegar
  • 3/4 cup brown sugar
  • 1/4 cup vegetable oil
  • 1 1/4 cup flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 egg.

Instructions
 

  • In a medium bowl combine the milk and vinegar to sour the milk.
  • Then add the oats and soak for a few minutes until soft.
  • Mix in the egg, brown sugar, and vegetable oil.
  • Then add in the flour, salt, baking powder, and baking soda and stir until well combined.
  • Fill the cupcake pan or muffin tins half full.
  • Bake at 375 degrees for 15-20 minutes.
