Method
- In a medium bowl combine the milk and vinegar to sour the milk.
- Then add the oats and soak for a few minutes until soft.
- Mix in the egg, brown sugar, and vegetable oil.
- Then add in the flour, salt, baking powder, and baking soda and stir until well combined.
- Fill the cupcake pan or muffin tins half full.
- Bake at 375 degrees for 15-20 minutes.
