Irish Oatmeal Chocolate Chip Cookies
These oatmeal chocolate chip cookies are super soft, chewy, and taste like Irish Cream Liquor!

- 1/2 cup unsalted butter room temperature
- 2/3 cup brown sugar
- 1 cup sugar
- 3 eggs
- 1 tsp vanilla
- 1/2 cup oats
- 2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 12 oz bag Bailey's Baking Chips
In a large mixing bowl the combine butter, sugar, and brown sugar and cream until light and fluffy.
Then add eggs one at a time and mix until well combined.
Add in the vanilla and mix again.
Add in the oats, flour, and baking soda and continue to mix until all ingredients are combined.
Fold in the Bailey's Chocolate Chips.
Chill dough for about at least 10 minutes before rolling into 2 inch dough balls.
Place cookie dough balls onto a cookie sheet and bake in batches at 350 degrees for about 12-14 minutes.
