Irish Oatmeal Chocolate Chip Cookies

These oatmeal chocolate chip cookies are super soft, chewy, and taste like Irish Cream Liquor!

Ingredients
  

  • 1/2 cup unsalted butter room temperature
  • 2/3 cup brown sugar
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1/2 cup oats
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 12 oz bag Bailey's Baking Chips

Instructions
 

  • In a large mixing bowl the combine butter, sugar, and brown sugar and cream until light and fluffy.
  • Then add eggs one at a time and mix until well combined.
  • Add in the vanilla and mix again.
  • Add in the oats, flour, and baking soda and continue to mix until all ingredients are combined.
  • Fold in the Bailey's Chocolate Chips.
  • Chill dough for about at least 10 minutes before rolling into 2 inch dough balls.
  • Place cookie dough balls onto a cookie sheet and bake in batches at 350 degrees for about 12-14 minutes.
