I absolutely love oatmeal chocolate chip cookies and found some Baileyās flavored chocolate chips at the store. So my next Irish inspired post for the month of March are these Irish Oatmeal Chocolate Chip Cookies! Soft, chewy, and loaded with oats and Irish Liquor flavor.

These Baileyās Irish Cream Chocolate Chips are non-alcoholic, though so these Irish Oatmeal Chocolate Chip Cookies are great for the whole family. Perfect for all of your St. Patrickās Day celebrations or all year long for a tasty treat. If you donāt have the Baileyās baking chips or canāt find them, regular chocolate chips would be great, too!

What is Baileyās Irish Cream Liquor?
What is so great about Baileyās Irish Cream Liquor? Well it is said that back in the day they were looking to create a drink that was smooth that was made of Irish Whiskey and cream. So Baileyās itself has hints of cocoa, cream, and Irish whiskey. Most people enjoy it on ice, in coffee, or with other coffee liquors to make a nice after dinner drink. I personally like to bake with it like in my Irish Chocolate Cheesecake or my Irish Chocolate Stout Cake.

What do you need for these Irish Oatmeal Chocolate Chip Cookies?
- butter
- brown sugar
- sugar
- eggs
- vanilla
- Old Fashioned Oats
- flour
- baking powder
- baking sodaĀ
- salt
- Baileyās Baking ChipsĀ

I found these Baileyās Chips at a local grocery store but they also have them on Amazon, too. When I saw them I knew I had to buy them. Even if you canāt use Baileyās Chips, you can still consider these Irish Oatmeal Chocolate Chip Cookies āIrishā because Irish people love their oats because they are a massive crop in Ireland.

How to make these Irish Oatmeal Chocolate Chip Cookies
Start with a large mixing bowl and add the butter and sugars.

With a mixer, cream together until light and fluffy. Add the eggs in one at a time and the vanilla and continue to mix. Then add in the old fashioned oats, flour, salt, and baking soda. Mix all of these dry ingredients until the dough forms.

Next add in the Baileyās Chocolate Chips and fold them in with a spatula or wooden spoon. Chill the dough for about 10 minutes while you get your pans out.

When ready to bake, roll the dough into 2 inch balls and place on a cookie sheet.

Bake at 350 degrees for about 12-14 minutes until lightly browned on the edges.

- In a large mixing bowl the combine butter, sugar, and brown sugar and cream until light and fluffy.
- Then add eggs one at a time and mix until well combined.
- Add in the vanilla and mix again.
- Add in the oats, flour, and baking soda and continue to mix until all ingredients are combined.
- Fold in the Baileyās Chocolate Chips.
- Chill dough for about at least 10 minutes before rolling into 2 inch dough balls.
- Place cookie dough balls onto a cookie sheet and bake in batches at 350 degrees for about 12-14 minutes.
