In a medium bowl add the tomatoes, shallots, and garlic.
Sprinkle with some salt, pepper, and Italian seasoning.
Stir the ingredients and drizzle with olive oil, Italian dressing, and red wine vinegar.
Stir until all ingredients are covered in liquids.
Add the pepperoncini and feta and on top.
Refrigerate for at least a few hours until ready to serve.

*the longer the tomatoes marinate, the softer the tomatoes will become. A few hours minimum, best over night.*Can add the pepperoncini and feta at the end before you serve for better presentation/ less soggy *about 6-8 servings as a side or 2-3 servings as a main dish.
