Method
- In a medium bowl add the tomatoes, shallots, and garlic.
- Sprinkle with some salt, pepper, and Italian seasoning.
- Stir the ingredients and drizzle with olive oil, Italian dressing, and red wine vinegar.
- Stir until all ingredients are covered in liquids.
- Add the pepperoncini and feta and on top.
- Refrigerate for at least a few hours until ready to serve.
Notes
*the longer the tomatoes marinate, the softer the tomatoes will become. A few hours minimum, best over night.
*Can add the pepperoncini and feta at the end before you serve for better presentation/ less soggy
*about 6-8 servings as a side or 2-3 servings as a main dish.
