Strawberry Cinnamon Roll French Toast Casserole

This easy breakfast casserole is perfect for breakfast or Brunch and perfect for the whole family!

Ingredients
  

  • 1 12.4 oz can refrigerated cinnamon rolls
  • 1 cup chopped strawberries
  • 3 large eggs or 4 smaller eggs
  • 1/2 cup milk
  • 1 tsp vanilla optional

Instructions
 

  • Cut the refrigerated cinnamon rolls into quarters.
  • In a medium mixing bowl combine the eggs, milk, and vanilla.
  • Whisk until well incorporated and then add in the cinnamon rolls and chopped strawberries.
  • Mix until all is coated and pour into an 8x8 baking dish (or similar).
  • Bake at 375 degrees for about 30-40 minutes until golden brown and center is cooked.
  • Drizzle the icing that comes with the cinnamon rolls all over the top.
  • Cut and serve hot with extra strawberries, syrup, or even whipped topping!
