Strawberry Cinnamon Roll French Toast Casserole

This easy breakfast casserole is perfect for breakfast or Brunch and perfect for the whole family!

Ingredients
  

  • 1 12.4 oz can refrigerated cinnamon rolls
  • 1 cup chopped strawberries
  • 3 large eggs or 4 smaller eggs
  • 1/2 cup milk
  • 1 tsp vanilla optional

Method
 

  1. Cut the refrigerated cinnamon rolls into quarters.
  2. In a medium mixing bowl combine the eggs, milk, and vanilla.
  3. Whisk until well incorporated and then add in the cinnamon rolls and chopped strawberries.
  4. Mix until all is coated and pour into an 8x8 baking dish (or similar).
  5. Bake at 375 degrees for about 30-40 minutes until golden brown and center is cooked.
  6. Drizzle the icing that comes with the cinnamon rolls all over the top.
  7. Cut and serve hot with extra strawberries, syrup, or even whipped topping!
