Simple Raspberry Icebox Cake

This classic no bake dessert is perfect for a cool treat on a hot Summer night!

Ingredients
  

  • 2 cups heavy whipping cream
  • 2 tsp vanilla
  • 3-4 tsp sugar to taste
  • 1 box Vanilla Wafers about 75 cookies
  • 1 cup raspberries 1 pint
  • 1 oz Baker's Chocolate for shavings (or any chocolate or cocoa powder)

Instructions
 

  • Pour the heavy cream into a chilled bowl and whip until the cream comes to stiff peaks.
  • Then add the sugar and vanilla to taste (if you like it sweeter add more sugar).
  • Start making a stack of cookies by spreading whipped cream on a cookie and placing another on top. I did about 8 at a time and then place them on their side in a 9x13 baking dish like a "log"
  • Keep adding to these stacks to desired length. I did about 25 cookies in 3 rows.
  • Spread the remaining whipped cream over the log like icing.
  • Add raspberries on top and grate some chocolate to make chocolate shavings on top!
  • Chill the cake for a few hours (at least 4)
  • To serve, slice on a slight diagonal to show off the layers.

Notes

**Can dust with cocoa powder or cinnamon, too.
** If serving the next day, you may want to add the raspberries and/or chocolate just before serving
