Simple Raspberry Icebox Cake

This classic no bake dessert is perfect for a cool treat on a hot Summer night!

Ingredients
  

  • 2 cups heavy whipping cream
  • 2 tsp vanilla
  • 3-4 tsp sugar to taste
  • 1 box Vanilla Wafers about 75 cookies
  • 1 cup raspberries 1 pint
  • 1 oz Baker's Chocolate for shavings (or any chocolate or cocoa powder)

Method
 

  1. Pour the heavy cream into a chilled bowl and whip until the cream comes to stiff peaks.
  2. Then add the sugar and vanilla to taste (if you like it sweeter add more sugar).
  3. Start making a stack of cookies by spreading whipped cream on a cookie and placing another on top. I did about 8 at a time and then place them on their side in a 9x13 baking dish like a "log"
  4. Keep adding to these stacks to desired length. I did about 25 cookies in 3 rows.
  5. Spread the remaining whipped cream over the log like icing.
  6. Add raspberries on top and grate some chocolate to make chocolate shavings on top!
  7. Chill the cake for a few hours (at least 4)
  8. To serve, slice on a slight diagonal to show off the layers.

Notes

**Can dust with cocoa powder or cinnamon, too.
** If serving the next day, you may want to add the raspberries and/or chocolate just before serving
