Method
- Pour the heavy cream into a chilled bowl and whip until the cream comes to stiff peaks.
- Then add the sugar and vanilla to taste (if you like it sweeter add more sugar).
- Start making a stack of cookies by spreading whipped cream on a cookie and placing another on top. I did about 8 at a time and then place them on their side in a 9x13 baking dish like a "log"
- Keep adding to these stacks to desired length. I did about 25 cookies in 3 rows.
- Spread the remaining whipped cream over the log like icing.
- Add raspberries on top and grate some chocolate to make chocolate shavings on top!
- Chill the cake for a few hours (at least 4)
- To serve, slice on a slight diagonal to show off the layers.
Notes
**Can dust with cocoa powder or cinnamon, too.
** If serving the next day, you may want to add the raspberries and/or chocolate just before serving
