Air Fryer Veggie Stuffed Zucchini Boats

These vegetable stuffed zucchini boats are loaded with fresh ingredients and perfect for a light meal!

  • Air Fryer or Oven

Ingredients
  

  • 2 medium sized zucchini
  • 1 tomato (Roma or similar) chopped
  • 1 jalapeno diced
  • 1 red bell pepper diced
  • 1/2 tsp garlic powder or fresh garlic
  • 1/2 tsp chili powder
  • salt & pepper to taste
  • 1/2 cup shredded Mexican style cheese
  • olive oil

Instructions
 

  • Wash the zucchini and slice lengthwise down the center.
  • Use a spoon to scoop out the center of the zucchini removing all of the seeds.
  • In a bowl combine the tomatoes, red pepper, jalapeno, seasonings, and cheese.
  • Mix until all the ingredients are tossed in seasonings.
  • Then spoon the mixture into the center of each zucchini.
  • Place in the Air Fryer basket or tray and spray or brush with olive oil.
  • Cook at 385-390 for about 12 minutes.
  • Serve hot with toppings of choice!!

Notes

Notes: Cooking times may vary according to appliance. If you ant the zucchini softer, cook a little longer.
If baking: Bake at 350 degrees for about 25-30 minutes.
