Corn & Black Bean Turkey Chili

olive oil

cup
onion
chopped
1
lb
ground turkey
or beef
1
tbsp
minced garlic
1/2
tablespoon
chili powder
1
tbsp
cumin
1/2
tbsp
ground coriander
1/2
tbsp
dried oregano
1
tbsp
dried thyme
1
tbsp
salt
1/2
tbsp
freshly ground black pepper

15 oz.
can of corn
drained
1
15 oz.
can of black beans
drained and rinsed

15 oz.
cans diced tomatoes
chili ready
1/2
tablespoon
fresh lime juice
Instructions
Heat olive oil in a stock pot over medium heat
Add the onions and ground turkey to the pot and cook until no longer pink.
Stir in the garlic and all of the seasonings.
Then add in the corn, black beans, and diced tomatoes.
Turn the heat down to low, and simmer for about 20-30 minutes.
Turn the heat off, and stir in the lime juice.
Serve hot with all of your favorite toppings!

Notes: serve with toppings of choice sour cream, cheese, cilantro, tortilla chips
