Healthy Apple Oatmeal Mini Muffins

Ingredients
  

  • 2 apples shredded (about 1 1/2 cups)
  • 1 cup whole wheat flour or regular
  • 1 cup oats
  • dash of salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp ground flax seed
  • 1/3 cup sugar
  • 1/4 cup vegetable oil
  • 1/4 cup water

Instructions
 

  • In a mixing bowl combine the flour, the oats, salt, baking soda, cinnamon, flax, and sugar.
  • Wisk until well combined.
  • Stir in the vegetable oil and water.
  • Then fold in the shredded apples.
  • Spoon the mixture into a greased mini muffin pan.
  • Bake at 350 degrees for about 15 minutes.
