Healthy Apple Oatmeal Mini Muffins

These apple oatmeal muffins are the perfect grab and go breakfast or snack throughout the day.

Ingredients
  

  • 2 apples shredded (about 1 1/2 cups)
  • 1 cup whole wheat flour or regular
  • 1 cup oats
  • dash of salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp ground flax seed
  • 1/3 cup sugar
  • 1/4 cup vegetable oil
  • 1/4 cup water

Method
 

  1. In a mixing bowl combine the flour, the oats, salt, baking soda, cinnamon, flax, and sugar.
  2. Wisk until well combined.
  3. Stir in the vegetable oil and water.
  4. Then fold in the shredded apples.
  5. Spoon the mixture into a greased mini muffin pan.
  6. Bake at 350 degrees for about 15 minutes.
