Cream of Potato Soup with Ham

This easy cream of potato soup is loaded with ham and comes together with just 6 ingredients.

Ingredients
  

  • 1 cup of chopped onion
  • 2 cups of cubed potatoes
  • 1 cup of water
  • 1 can of cream of chicken soup
  • 2 cans of milk
  • Salt - pepper to taste
  • 2 cups chopped ham
  • 1 cup shredded cheddar cheese or similar

Instructions
 

  • In a medium pot, sauté the onions in a small amount of extra virgin olive oil.
  • Add in the potatoes, ham, and water.
  • Cook, covered, for about 15 minutes until the potatoes are tender.
  • Blend in the can of chicken soup and the milk.
  • Salt and pepper to taste.
  • Heat through, but do not boil.
  • Stir in the shredded cheese if using and serve hot.
