Method
- In a medium pot, sauté the onions in a small amount of extra virgin olive oil.
- Add in the potatoes, ham, and water.
- Cook, covered, for about 15 minutes until the potatoes are tender.
- Blend in the can of chicken soup and the milk.
- Salt and pepper to taste.
- Heat through, but do not boil.
- Stir in the shredded cheese if using and serve hot.
