Air Fryer Veggie Stuffed Zucchini Boats

These vegetable stuffed zucchini boats are loaded with fresh ingredients and perfect for a light meal!

Ingredients
  

  • 2 medium sized zucchini
  • 1 tomato (Roma or similar) chopped
  • 1 jalapeno diced
  • 1 red bell pepper diced
  • 1/2 tsp garlic powder or fresh garlic
  • 1/2 tsp chili powder
  • salt & pepper to taste
  • 1/2 cup shredded Mexican style cheese
  • olive oil

Equipment

  • Air Fryer or Oven

Method
 

  1. Wash the zucchini and slice lengthwise down the center.
  2. Use a spoon to scoop out the center of the zucchini removing all of the seeds.
  3. In a bowl combine the tomatoes, red pepper, jalapeno, seasonings, and cheese.
  4. Mix until all the ingredients are tossed in seasonings.
  5. Then spoon the mixture into the center of each zucchini.
  6. Place in the Air Fryer basket or tray and spray or brush with olive oil.
  7. Cook at 385-390 for about 12 minutes.
  8. Serve hot with toppings of choice!!

Notes

Notes: Cooking times may vary according to appliance. If you ant the zucchini softer, cook a little longer.
If baking: Bake at 350 degrees for about 25-30 minutes.
