BBQ Burger Biscuit Cups (Meat Muffins)

These little BBQ Burger Biscuit Cups are a family favorite over here. They make the perfect weeknight dinner with just a few ingredients (plus you can hide some veggies in them)!

Ingredients
  

  • 1 lb beef or ground turkey
  • ¼ cup shredded carrots
  • ¼ cup chopped onion or less
  • ½ cup BBQ sauce
  • 1 ½ cups shredded Colby or Mild Cheddar Cheese

Equipment

  • 1 cupcake pan or muffin pan

Method
 

  1. Spray a cupcake pan or muffin pan with non-stick spray (or can use liners).
  2. Split the biscuits in half so that you can make 16 cups and press into pan. (Can also use 8 for bigger versions just may cook longer).
  3. Cook ground beef over medium heat with the shredded carrots and onions until browned.
  4. Drain any grease and then stir in the BBQ sauce.
  5. Spoon the mixture into biscuits and top with cheese.
  6. Bake at 350 degrees F for about 15 minutes (or until golden).
