Berry & Apple Upside Down Bundt Cake

This upside down cake is loaded with fresh fruit and perfect anytime of the year!

Ingredients
  

  • For Glaze:
  • 3/4 cup butter
  • 1/2 cup brown sugar
  • 2 apples peeled and sliced
  • 1 1/2 cups fresh berries blackberries, raspberries, and blueberries
  • For Cake Batter:
  • 3/4 cup butter room temperature
  • 1 1/2 cups sugar
  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 3/4 cup milk
  • 1 1/2 tsps vanilla
  • 3 eggs

Instructions
 

  • For Glaze:
  • Melt 3/4 cup butter and add to greased bundt pan.
  • Then sprinkle the brown sugar over melted butter.
  • Arrange the sliced apples around the bundt pan.
  • Then layer fresh berries over the apple layer.

To make the batter:

  • In stand mixer cream together the butter and sugar until light and fluffy.
  • Then add vanilla and beat in eggs one at a time.
  • In a seperartae bowl combine flour and baking powder.
  • Then slowly add in flour mixture to wet ingredients alternating with the milk.
  • Then mix until well combined (do not over mix).
  • Pour batter over apple/berry layers.
  • Bake at 350 for about 40 minutes.
  • Let cool before flipping and removing from pan.
  • Slice and serve with more berries, ice cream, or whipped topping.
