- Start by preheating your Blackstone griddle over low-medium heat. Add a little oil, then place the chicken thighs on the hot griddle. Season with your favorite BBQ rub. Cook the chicken until it is browned on the outside and reaches an internal temperature of 165 degrees F.
- While the chicken cooks, add the diced onion and corn to another area of the Blackstone . Cook until the onion softens and the corn gets a little color around the edges. (can squirt a little water if needed).
- I drizzled the bbq sauce at this point and then toss the corn and onions into the chicken.
- To make the quesadillas, place the tortilla down on the Blackstone. Add shredded cheese to one half of the tortilla, then spoon on the BBQ chicken mixture. Add a little more cheese on top (if desired) before folding the tortilla over.Cook the quesadillas for a few minutes per side, pressing gently with a spatula, until the tortillas are golden brown and crispy and the cheese is melted.
Stove Top Instructions
- Follow the recipe above and heat up a cast iron skillet or larger pan. Add oil and cook the chicken along with some of the BBQ rub. When its almost finished add in the onion and corn and cook a few minutes longer. Add in the bbq sauce before assembling your quesadillas.
- Heat a clean skillet or non-stick pan over medium heat and lightly grease it with butter or oil. Add a tortilla, then layer with shredded cheese and the chicken mixture. Fold and cook for 2-3 minutes per side until the tortilla is golden brown, crispy, and the cheese is melted.
