Ingredients

tbsp
olive oil

stalks celery
chopped

large carrots
chopped

onion
chopped

64 oz.
bottle Spicy Tomato Juice
or store brand

roma tomatoes
chopped
2
cups
fresh green beans
ends removed, chopped
1
head cabbage
core removed, chopped
1
15 oz.
can garbanzo beans
4

water
3
cloves
garlic
chopped
salt & pepper to taste
Instructions
In a large 8q stock pot, heat olive oil and add carrots, onions, and celery.
Cook for a few minutes until fragrant.
Add juice, water, garlic, tomatoes, green beans, and cabbage.
Salt and pepper to taste.
Bring to a boil, stir and simmer covered for about 1-2 hours.

Note: to reduce simmer time, chop veggies and cabbage into smaller pieces
