Cabbage Soup

This healthy Cabbage Soup is super easy to prepare, with fresh vegetables and spicy V8 juice as the base. Easy, nutritious, and delicious!

Ingredients
  

  • 1 tbsp olive oil
  • 3 stalks celery chopped
  • 3 large carrots chopped
  • 1 small onion chopped
  • 1 64 oz. bottle Spicy Tomato Juice or store brand
  • 5 roma tomatoes chopped
  • 2 cups fresh green beans ends removed, chopped
  • 1 head cabbage core removed, chopped
  • 1 15 oz. can garbanzo beans
  • 4 cups water
  • 3 cloves garlic chopped
  • salt & pepper to taste

Instructions
 

  • In a large 8q stock pot, heat olive oil and add carrots, onions, and celery.
  • Cook for a few minutes until fragrant.
  • Add juice, water, garlic, tomatoes, green beans, and cabbage.
  • Salt and pepper to taste.
  • Bring to a boil, stir and simmer covered for about 1-2 hours.

Note: to reduce simmer time, chop veggies and cabbage into smaller pieces
