Celebration Sprinkle Surprise Cupcakes

Ingredients Method

Ingredients
  

  • 1 15 oz. box yellow cake mix or flavor of choice
  • Water, oil, and eggs called for (plus add an extra egg)
  • 1 3.4 oz vanilla Instant pudding
  • 1 16 oz. tub vanilla frosting
  • 4 oz. packages cream cheese softened
  • 1 cup Easter sprinkles

Method
 

  1. In a large bowl combine the cake mix, water, oil, eggs, and pudding. Beat or mix for about 2 minutes.
  2. Pour batter into cupcake liners about 1/2 to 3/4 full.
  3. Bake for about 15-18 minutes at 350 degrees f until centers are cooked.
  4. Let cupcakes cool.
For the Surprise Sprinkle Center
  1. Once cooled you can use the frosting tip, a corer, or knife to carve a hole in the center of the cupcake (go about 1/2 way down).
  2. Repeat and add some sprinkles to the holes.
For the Cream Cheese Frosting
  1. In a mixing bowl combine the tub of frosting and softened cream cheese. Beat until light fluffy and add to a piping bag or Zip-lock bag.
  2. Frost cupcakes to your liking and add some more sprinkles on top.
