Heat up your skillet over medium and add in some olive oil. Add in the onions, green peppers, and potatoes. Cook for about 5 minutes until the veggies are soft and fragrant.
Add in the ground beef and continue to cook about another 5 minutes until no longer pink.
Once the meat is browned, add in the chopped tomatoes and the can of sloppy Joe sauce. Add a little water to the can, swirl, and add to the mixture.
Give everything a stir to make sure it's well combined. Lower the heat to a simmer, cover and let cook about 10 minutes longer.
After 10 minutes, check the potatoes with a fork to see if they are tender. If not, cook few minutes longer.
Add the shredded cheddar cheese to the top and cover for a few minutes until melted. Serve hot and enjoy!
