Method
- In a mixing bowl cream together the softened butter and the sugar with a electric mixer until light and fluffy.
- Beat in the egg, the vanilla, and the almond extract until everything is well combined.
- In a separate bowl combine the flour, coconut, baking powder, and the salt and whisk.
- Slowly add the dry ingredients to the creamed mixture and mix until everything is well combined.
- Form the dough into about 1 inch balls (30 total) and place onto baking sheets.
- Use the bottom of a beverage glass that has a decoration on the bottom (dipped in flour) to press the dough down.
- Bake at 350 degrees F for about 12-14 minutes on until cooked.
For the filling:
- Combine the butter, the powdered sugar, milk, vanilla, and coconut and mix until well incorporated and frosting forms.
- Once the cookies are cooled, add a spoonful of the filling to it on the flat side of the cookie and spread.
- Add about a spoonful or more of strawberry jam on top.
- Place another cookie on top (flat side facing jam) to make a sandwich and press down.
- Repeat until all "sandwiches" are made and enjoy!
