Easy Chili Shrimp & Guacamole Toast

This Easy Chili Shrimp & Guacamole Toast recipe is perfect for a party appetizer or light meal any time of the year.

Ingredients
  

  • 1 tbsp olive oil or oil of choice
  • 8-10 raw shrimp (defrosted) peeled & deveined (tails off)
  • 1/4 tsp chili powder
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 French baguette
  • 1 small tub of guacamole I used Southwestern Style
  • 1 green onion optional

Method
 

  1. Heat the olive oil up over medium heat in a small pan. Toss in the raw shrimp with the chili powder, salt, and pepper. Give them a stir and let cook until they turn pink.
  2. While the shrimp are cooking, slice your baguette diagonally. Toast them in the oven or broiler until golden and crisp to your liking. (Just a few minutes)
  3. Remove from the oven and add a large spoonful of guacamole to each toast.
  4. Top with the cooked shrimp on each toast and sprinkle with some chopped green onion and serve.
