Easy Egg Drop Soup

This easy homemade egg drop soup is the ultimate comfort food—simple, soothing, and ready in minutes. Made with pantry staples like chicken broth, eggs, and a touch of seasoning, this classic takeout favorite comes together effortlessly on the stovetop.

Ingredients
  

  • 4 large eggs
  • 2 32 oz. cartons of low sodium chicken broth
  • 1-2 tsp black pepper
  • red pepper flakes- to taste
  • 1/2 tsp salt
  • dash of ginger powder optional
  • 2 green onions sliced

Method
 

  1. Whisk the eggs together in a bowl.
  2. In a large pot, combine the chicken broth, red pepper flakes, pepper, salt, and ginger powder if using.
  3. Bring to a boil.
  4. Once the broth is boiling, slowly stir in the egg mixture and whisk until it comes to a low boil again.
  5. Pour into bowls, garnish with the green onions, and enjoy.

If you are looking for a smaller serving just cut this recipe in half. We like leftovers in out house for a 2nd meal :)
