Easy Lemon Cake Mix Cookies

Ingredients
  

  • 1 15.25 oz box white cake mix or lemon
  • 1 large lemon juiced & zested
  • 1/2 cup vegetable oil
  • 3 eggs
  • sugar optional

Method
 

  1. Zest and juice the lemon.
  2. In a medium mixing bowl, combine cake mix, eggs, vegetable oil, and lemon juice & zest.
  3. Mix with a spoon until batter forms.
  4. If you want a more formed cookies, place dough in the refrigerator for at least 10 minutes.
  5. Spoon dough onto cookie sheets (about 24 cookies).
  6. Bake at 350 degrees for about 11-13 minutes until edges start to brown.
  7. After you pull them out of the oven, sprinkle with a dash of sugar and enjoy!
