Easy Skillet Taco Gnocchi

This Easy Skillet Taco Gnocchi make a great quick weeknight dinner with just six ingredients that the whole family will love.

Equipment

  • 1 cast iron skillet or regular

Ingredients
  

  • 1 lb ground beef or ground turkey
  • 1 Jalapeno diced (optional)
  • 1 15 oz. canned tomatoes with green chiles
  • 1 packet taco seasoning plus water it calls for
  • 1 16 oz. package of potato gnocchi
  • 1 ½ cups Mexican style shredded cheese more or less to your liking

Instructions
 

  • Heat your skillet over medium and add in the ground beef and jalapeno. Cook and drain any grease.
  • Meanwhile boil a pot of water and cook the gnocchi for 2-3 minutes until they float (according to instructions). (optional step: sauté the cooked gnocchi with some olive oil to add a little crisp)
  • Then add in the canned tomatoes, taco seasoning packet , and water to the meat mixture.
  • Stir and let cook until the sauce thickens for about 2 minutes.
  • Add in the cooked gnocchi, stir until all is combined, and top with the shredded cheese.
  • Place the cast iron under the broil in the oven until cheese melts/ is baked to your liking (or cover on the stove until melted).
  • Serve hot with additional topping of choice: sour cream, hot sauce, cilantro, salsa, etc!
